Smoky Puy Lentils in Soft Shell Tacos with Rainbow Toppings

Our latest recipe from Bettina's Kitchen brings something a little different this month - a delicious savoury dish to delight your family, dinner guests, or even just your own taste buds!

Ingredients for Smoky Puy Lentil Tacos

"Chocolate in a savoury recipe you say? Chocolate (and its properties) has been used for its flavours not only in sweet recipes, but in savoury for centuries. This is a South American inspired recipe that includes the Ombar 90% Raw bar in a savoury, slow-cooked smoky dish. Make sure that you don’t forget that squeeze of lime on top because it cuts right through that thick flavour and creates a party in your mouth.

2 cups of black Puy lentils (pre-cooked)

3 cups of good quality tomato sauce 

1 red onion, chopped

2 garlic cloves, chopped

½ bar of Ombar 90% Raw

2 tbs of olive oil

Salt and pepper to taste


Tortilla Fillings

2 - 4 tortillas (good quality)

1 avocado, sliced

1/2 tomato, chopped

1 lime, sliced (to be squeezed on top)

Slices of red onion (for topping)

Handful of rocket (for topping)

1 tsp of black sesame seeds

2 tbs of plant-based sour cream (soy or oats or any other)

  1. Start off by pre-boiling your black Puy lentils. If you are clever and have bought pre-boiled ones then leave them to the side. Continue by chopping the red onion that will be your smoky Puy lentil base along with the tangy garlic.
  2. In a hot pan add olive oil, chopped red onion, garlic and let them gently soften. Once soft add your Puy lentils and the tomato sauce, mix well and let it cook and combine for 10 minutes.
  3. Just as your mixture is combining add half a 90% Ombar and mix until it has melted. Add salt and pepper to taste.
  4. Now to put this beautiful plate together…
  5. Start preparing your toppings by first finely slicing your avocado, and then your onion and tomato.
  6. In a bowl add your beautiful smoky Puy lentil mix, dress with the avocado, sliced onions and lastly tomatoes. Sprinkle some rocket on the top for show, sprinkles of black sesame seed on the avocado, dollops of sour cream, and last but not least your soft tortillas that you can either chop in four pieces or arrange at the bottom.
